Anti-nutrients

Anti-nutrients are natural or synthetic substance similar in structure to a vitamin that interferes with its normal functioning by competitive inhibition, inactivation or chemical destruction. These are foods that rob the body of its essential micro-nutrients. Examples are glucosinolates (iodine, iron and zinc), lectins (calcium, iron, phosphorus and zinc), oxalates (calcium), phytates (iron, zinc, magnesium and calcium), tannins (iron and zinc) and saponins
